Tofu Soba Bowl 🍲🥢

is something I can eat several times per week and don’t get bored. 

1. What is required for 2 servings:

~70-80 g. soba (or rice noodles)

~60 g. tofu

~120 g. frozen edamame 

handful of spinach

handful of microgreens of your choice

fresh cilantro

1 tsp sesame oil

3 tbsp rice vinegar

1 tbsp soy sauce

1 tbsp tahini

2. Fry tofu in sesame oil until all sides are crispy and golden. Meanwhile, cook soba according to the packaging instruction.

3. Chop cilantro. Mix rice vinegar, soy sauce, and tahini until smooth.

4. Cook edamame in the boiling water until soft (around 10 minutes) 

Assemble the bowl! This and it’s variations are something I eat very frequently. It is so easy and delicious 🤤
